When I first came across Jerry Thomas' little guide (last published 1887) in a dusty old guide shop I was blown away.
Here finally was cocktail history laid bare! I bought it on the spot and literally sat up all night and read the guide cover to cover.
For anybody with even a flicker of interest in cocktails and drinks it is an enthralling read. Jerry Thomas is to cocktail culture what Louis Armstrong is to Jazz!
Here finally, set down on paper, were a number of the very first cocktail recipes ever recorded. It was incredible, however it was not only cocktails, the guide contained a host of other recipes, for "Punch, Egg Nogs, Juleps, Smashs, Cobblers, Mulls, Sangarees, Toddies, Slings, Sours, Flips, Negus, Shrubs, Pousse Café, Cups" and a lot, a lot more.
In total there were a number of 230+ original recipes. A number of were famous, a number of I would never even heard of! They represented an incredible cross-section of exciting and wonderful drinks.
I'm pretty sure of one thing and that is 99% of bartenders have no idea how to create these drinks anymore.
Thomas's guide was grandly entitled "THE BAR-TENDER’S EBOOK OR THE WAY TO MIX DRINKS". It's been out of print for nearly a 120 years and the revelations of the recipes have been mostly forgotten or changed out of all recognition.
Ought to these legendary recipes be kept under wraps, unknown, unloved?

Blue Blazer.
(Use 2 silver-plated mugs.)
(Note: Warning this process is dangerous!

below completely at your own risk!) Take 1 small tea-spoonful of powdered white sugar dissolved in 1 wine-glass of boiling water.
1 wine-glass of Scotch whiskey.
Put the whiskey and the boiling water in one mug, ignite the liquid with fire, and while blazing mix both ingredients by pouring them four or five times from one mug to the other.
If good job this'll have the appearance of a continued stream of liquid fire.
Serve in a tiny bar-glass with a piece of twisted lemon peel.
The novice in mixing this beverage ought to be careful not to scald himself. To become proficient in throwing the liquid from one mug to the other, it'll be necessary to practise for a number of time with cold water.

Here is the preparation instructions for the Brandy Crusta, one of my own favourites from the guide,
Brandy Crusta.
(Use Small bar-glass.) Take 3 or 4 dashes of gum syrup.
1 dash of Boker's bitters.
1 wine-glass of brandy.
2 dashes of Curacoa.
1 dash lemon juice.
Prior to mixing the above ingredients, prepare a cocktail glass as follows:
Rub a sliced lemon across the rim of the glass, and dip it in pulverized white sugar, so that the sugar will adhere to the edge of the glass.
Pare half a lemon the same as you would an apple (all in one piece) so that the paring will fit in the wine-glass, as shown in the cut. Put the above ingredients into a tiny whiskey glass filled one-third complete with shaved ice, shake up well and strain the liquid into the cocktail glass prepared as above directed.
Jerry was very much part showman part bartender, much like today's top Bartenders, and led a fascinating life,
About Jerry Thomas
Jeremiah P. Thomas was born in Jefferson County, New York in November 1830 and first learned the bartending trade in New Haven. He then went to San Francisco and the California gold fields.
In 1851 he opened the first of four saloons in New York, below Barnum's Museum at Broadway and Ann Street. He then seems to have travel across the US for several years. Working as head bartender at top hotels in St. Louis, Chicago, San Francisco, Charleston, S.C., and New Orleans. Slowly turning himself into Americas first celebrity bartender! In 1859 he visited London and Paris. He took with him a collection of solid silver bar utensils constructed at a cost of $4,000!
Returning to New York he became the principal bartender at the Metropolitan hotel. Then in 1866 he opened his the majority of famous bar located on Broadway between 21st and 22nd Streets.
Thomas was "an imposing and lordly figure of a guy, portly, sleek and jovial, yet possessed of immense dignity". His trade mark was a "jacket of pure and spotless white which encased his good bulk". He also sported a large moustache, in the Walrus style! Obviously a guy once seen, not effortlessly forgotten!
The various saloons he operated became showplaces where he demonstrated his mixologist's art. They were very popular amongst sporting and theatrical celebrities of the day. To quote the New York times on his death in 1885 he was "at one time better known to club guys and men about town than any other bartender in the city, and he was very popular among all classes".
He is credited with inventing the "Blue Blazer" and the "Tom and Jerry" and certainly popularised a lot other early cocktails and drinks.
Thomas’s guide was first published in 1862, and rapidly went through half a dozen printings. The guide was updated in 1876 and the final edition published in 1887. In the first edition there were ten recipes which Thomas referred to as cocktails (by the 1887 edition the cocktails numbered a number of 20+). His guide was most likely the first to include actual preparation instructions for cocktails and certainly the planet earth's first bartender's ebook.
He died of apoplexy in 1885 at the age of 55. Recent research done by well know cocktail author David Wondrich has tracked down his grave that can be seen in Woodlawn Cemetery in the Bronx, New York.
